Hyderabadi Vegetable Dum Biryani
I would never say that this is the traditional way of making hyderabadi dum biryani..I made this biryani few days back and it turned out so yummy. Hope you will love it for sure.

Ingredients for Hyderabadi Vegetable Dum Biryani
- Basmati Rice - 1 cup
- Oil - 2 tbsp
- Shahi Jeera / Black Cumin Seeds - 1 tsp
- Ginger Garlic Paste - 2 tbsp
- Carrot - 1 large cubed
- Cauliflower - 1 cup florets
- Beans - 10 chopped
- Peas - 1 cup
- Capsicum / Bell Pepper - ½ cubed
- Green Chillies - 3
- Mint Leaves a handful finely chopped
- Coriander leaves a handful finely chopped
- Biryani Masala Powder - 3 tbsp ( Recipe here)
- Yogurt / Curd - ½ cup
- Cream - ¼ cup
- Salt to taste
For Topping:
- Coriander leaves a handful finely chopped
- Mint Leaves a handful finely chopped
- Ghee - 3 tbsp
- Cashews a handful
- Kishmish a handful
- Onion - 1 medium size sliced thinly
- Saffron a pinch
- Warm milk - 3 tbsp
- Rose Essence few drops
- Kewra Essences few drops

How to Make Hyderabadi Vegetable Dum Biryani
- Wash and soak basmati rice for 30 mins. Soak saffron in warm milk and set aside.
- Heat oil in a pot. Add in cumin seeds and ginger garlic paste and saute for a min.
- Add in the veggies and some salt. Saute it for couple of mins. Cover and cook for 5 mins.
- Now add in green chillies and saute for a min.
- Now add in yogurt and cream and mix well.
- Add in masala powder and mix well. Simmer for few more mins.
- Now add in coriander and mint leaves and mix well.'
- Meanwhile cook basmati rice till it is 90 percent done, Drain it and add it to the top of the veggie mix.
- Heat some ghee in a pan, add in cashews and raisins and fry till golden. Add in onions and fry till golden brown.
- Now pour this over the rice, top with coriander and mint leaves and spoon over saffron milk.
- Cover with a tight lid and put on low flame and let it be on dum for 15 to 20 mins.
- If you are using bread, fry till golden. Drain it and add to the rice and fluff the rice.
- Serve.

I have never seen anyone making Biryani in a flat pan. Looks more like Tawa rice . . . .

Regarding this recipe of Vegetarian Biryani - yogurt is written down in the instructions, but I cannot find it in the ingredients. How much yogurt should I use?

Is it essential that we have to add kewara or rose essence..I have been regularly cooking your recipes which turns out delicious. .thank you for posting different varieties.

Hi Aarthi.. It luks too yummy.. I hve tried ur hyderabadi lamb biriyani n it turned out very delicious. I hve a doubt wat does 1cup of basmati rice mean. Cud u pls say it in terms of gram or kg.

Why to dum cook by placing the sealed pot over a tava and not directly over the stove? Any specific reason to do so ?
